Crazy easy brownies

Hey all! Just a short post today as its my birthday! I’m quickly popping this recipe up before heading out to lunch with my fam.

 

I named this recipe crazy easy brownies as they are crazy good, and crazy easy to make.

These brownies are rich and dark and gooey and made from scratch, so please don’t even think of ever buying a packet brownie mix again. You control the final look and taste, as the craziness is made up of your favourite add-ins. Go crazy – add chocolate! Sprinkles! Nuts! Dried fruit – if you must. It is a great way of using up little bits and pieces that you have in the pantry.

Misses 8 and 10 thought this was a pretty cool after school snack, even though the addition of peppermint choc chips made these far too sweet for me.

 

GATHER:

150 grams butter, diced

100 grams caster sugar

70 grams unsweetened cocoa powder

1 teaspoon vanilla paste

2 eggs

50 self-raising flour

1 cup favourite additions – I used dark chocolate chips, white chocolate chunks, peppermint choc chips and sprinkles and M&Ms but other great additions would include almonds, caramel choc chips or left over lollies (candy)

LET’S GET TO IT:

Preheat oven to 160C and grease and line a 20cm square cake can with non-stick baking paper. Leave an overhang at two opposite sides for easy removal.

Melt the butter in a large pan over low heat then remove from heat. Stir in sugar, vanilla, cocoa, eggs and flour until everything is combined and glossy.

Stir in your cup of additions, leaving a handful to sprinkle over the top.

Scrape into pan, smooth the top with an offset spatula then decorate with the extra add-ins.

Bake for 18 minutes – they should be starting to firm up around the edges but still look a bit undercooked in the centre.

Remove from oven, place on wire rack and allow to cool completely before cutting into squares.
